Ingredients (serves 4)

  • 500g Bloom Herbals organic spinach (palak), washed
  • 250g fresh paneer, cubed
  • 1 tbsp ghee + 1 tsp cumin seeds
  • 1 onion (finely chopped)
  • 2 garlic cloves + 1 inch ginger (paste)
  • 1 green chilli, slit
  • 1 tsp garam masala, ½ tsp turmeric, salt
  • 2 tbsp fresh cream

Method

  1. Blanch spinach in boiling water 60 seconds, transfer to ice water — preserves the bright green colour and vitamin C.
  2. Blend to a smooth purée with the green chilli.
  3. Heat ghee, splutter cumin, sauté onion until golden (5 min).
  4. Add ginger-garlic paste, cook 1 min. Add turmeric.
  5. Pour in spinach purée + ½ cup water. Simmer 4 min.
  6. Add paneer cubes, garam masala, salt. Simmer 3 min more.
  7. Stir in cream off heat. Serve with hot rotis.
