Ingredients (serves 4)
- 500g Bloom Herbals organic spinach (palak), washed
- 250g fresh paneer, cubed
- 1 tbsp ghee + 1 tsp cumin seeds
- 1 onion (finely chopped)
- 2 garlic cloves + 1 inch ginger (paste)
- 1 green chilli, slit
- 1 tsp garam masala, ½ tsp turmeric, salt
- 2 tbsp fresh cream
Method
- Blanch spinach in boiling water 60 seconds, transfer to ice water — preserves the bright green colour and vitamin C.
- Blend to a smooth purée with the green chilli.
- Heat ghee, splutter cumin, sauté onion until golden (5 min).
- Add ginger-garlic paste, cook 1 min. Add turmeric.
- Pour in spinach purée + ½ cup water. Simmer 4 min.
- Add paneer cubes, garam masala, salt. Simmer 3 min more.
- Stir in cream off heat. Serve with hot rotis.
